Olfactory : typical bottle fermentation features bouquet, bread crust scent and delicate dried fruit notes, as almond and hazelnut, accompanied by pleasant flower scents.
Tasting : balanced, silky, well structured, held up by its citrus freshness.
Serving Temp : 10°-12°C
Food pairing : Excellent appetizer, great with delicate first courses, lake fishes and crustaceans
Vinification : Depending on the year a variable percentage is refined in French wood oak barriques, later the natural fermentation occurs in the bottle and so the Èlevage on the yeast for a period not inferior to 30 months. Afterwards, the bottle will rest for at least two or three months in the cellar before being commercialized.
